What is the best steak for steak tacos?

Sirloin is one of the best cuts for steak tacos because it’s lean, tender and cooks quickly. Ribeye also work well if you prefer a richer flavour. For this recipe, sirloin keeps the tacos high in protein while staying lower in fat.

 

 

How do you make tender steak tacos?

The secret is not to overcook the steak. Cook it in a very hot pan for 2–3 minutes per side, then let it rest before slicing thinly against the grain. Resting keeps the meat juicy, while slicing against the grain makes every bite more tender.

 

 

What is avocado crema?

Avocado crema is a smooth, creamy sauce made with avocado, Greek yogurt, lime juice, garlic and fresh herbs. It’s similar to guacamole but much smoother and lighter, making it perfect for tacos, burritos, nachos and grilled meats.

Method

Step 1

Make the salsa by adding all the ingredients to a food chopper, or finely dice everything by hand and mix in a bowl. Season to taste and set aside.

Step 2

Add all the avocado crema ingredients to a blender and blend until smooth (about 1 minute). Set aside.

Step 3

Rub the steaks with a little oil and season with salt and pepper. Cook in a hot pan for 2–3 minutes per side, or until cooked to your liking. Leave to rest for a few minutes.

Step 4

Warm the corn tortillas in a dry pan until lightly toasted.

Step 5

Assemble the tacos with the avocado crema, sliced steak, and fresh salsa. Enjoy 🙂

Ingredients

For the steak:

2 200g sirloin steaks, fat removed

1 tbsp olive oil

Salt and pepper

For the salsa:

10 cherry tomatoes, diced

½ red onion, diced

1 jalapeño, finely sliced

Handful of coriander, chopped

Juice of 1 lime

Salt and pepper, to taste

For the avocado crema:

2 ripe avocados

1 green chilli, roughly chopped

1 tbsp fresh coriander, roughly chopped

juice of 1 lime

juice of 1 lemon

4 tbsp Greek yogurt

2 tbsp light mayo

1 garlic clove, peeled

Corn tacos, to serve
