High Protein Breakfast Bagels

These high protein breakfast bagels are perfect for meal prep and are so easy to customise with whatever you've got in the fridge. I had some leftover sausages and cherry tomatoes, so I mixed a little cottage cheese into the eggs for an extra protein boost.

Why is this a high protein breakfast?

Each breakfast bagel contains around 30g of protein, thanks to the eggs, cottage cheese, sausages and cheese. It’s a filling breakfast that can help keep you satisfied throughout the morning, making it ideal after a workout or on busy days.

 

 

Can I meal prep these breakfast bagels?

These high protein breakfast bagels are perfect for meal prep. Simply wrap each bagel individually and store them in the fridge for up to 5 days. They’re ideal for grab-and-go breakfasts during the week.

 

 

Can I freeze breakfast bagels?

Absolutely. Wrap each assembled bagel individually in foil or baking paper before placing them into a freezer bag or airtight container. Freeze for up to 3 months. Defrost overnight in the fridge or reheat straight from frozen until piping hot.

 

 

What’s the best way to reheat breakfast bagels?

For the best texture, reheat them in the air fryer at 180°C for 7-8 minutes, or until the cheese has melted and the filling is hot. You can also microwave them for a quicker option.

 

 

Can I customise this breakfast bagel recipe?

This recipe is perfect for using up leftovers from the fridge. Try adding spinach, mushrooms, peppers, spring onions, sweetcorn or even leftover bacon or ham. You can easily swap ingredients to suit your taste.

 

 

Can I make these breakfast bagels vegetarian?

Yes. Simply leave out the sausages or replace them with vegetarian sausages. The eggs and cottage cheese still provide plenty of protein.

 

 

Can I use different bagels?

Definitely. White, wholemeal, seeded or high protein bagels all work well. Choose your favourite or whatever you already have at home.

 

 

Do I have to use cottage cheese?

No. The cottage cheese adds extra protein and makes the eggs lovely and soft, but you can leave it out if you prefer. Greek yoghurt or a little light cream cheese also work well.

 

 

Are these breakfast bagels good for busy mornings?

They are ideal. Preparing them in advance means you’ll have a homemade high protein breakfast ready in minutes. Simply grab one from the fridge and enjoy it cold or reheat before eating.

 

 

What sauce goes best with breakfast bagels?

That’s completely up to you! Tomato ketchup and brown sauce are both classic choices, but chilli sauce, hot honey or even a little sriracha works too.

 

 

Can I cook the egg mixture in the oven instead?

Yes. If your air fryer isn’t large enough, bake the egg mixture in a preheated oven at 180°C (160°C fan) for around 20–25 minutes, or until the eggs are fully set.

 

 

Are these breakfast bagels good for a healthy breakfast?

These bagels are packed with protein and can easily be adapted to suit your preferences. Using lean sausages, reduced-fat cheese and cottage cheese helps create a satisfying breakfast that’s great for meal prep and busy weekdays.

Method

Step 1

Cook the sausages in the air fryer according to the packet instructions (I usually cook mine at 200 for 10–12 minutes).

Step 2

While they’re cooking, crack the eggs into an ovenproof dish. Season with salt and pepper, add the cottage cheese and mix well combined.

Step 3

Once the sausages have cooled slightly, chop them into bite sized pieces and stir them into the egg mixture along with the cherry tomatoes.

Step 4

Air fry the egg mixture at 180 for 15–17 minutes, or until the eggs are set and cooked through. (If your air fryer doesn’t fit the dish, you can bake it in the oven at 180 until set).

Step 5

Leave the egg bake to cool slightly, then slice each bagel in half. Cut the egg bake into 5 portions (or 6 if you fancy a snack!) and add a portion to each bagel.

Step 6

Top each bagel with a slice of cheese and your favourite sauce. Enjoy 🙂
