Method
Step 1
Preheat the oven according to the cooking instructions for your chicken. Place the chicken in a roasting tin, drizzle with the olive oil and sprinkle over the mixed herbs. Stuff the lemon inside the cavity. If you have any leftover vegetables, add them to the tray to roast alongside the chicken. Cook until the chicken is golden and cooked through.
Step 2
While the chicken is roasting, make the stuffing. Blend the bread into fresh breadcrumbs. Melt the butter in a frying pan over a medium heat, then cook the onion for 4-5 minutes until softened. Stir in the garlic and dried sage and cook for another minute before adding the breadcrumbs and parsley. Season with salt and pepper, then cook for a few minutes until the stuffing is lightly golden.
Step 3
Leave the cooked chicken to cool slightly, then slice or shred the meat. If you have any cooking juices left in the roasting tin, don’t throw them away. I like to turn them into a quick gravy by skimming off any excess fat, stirring in a little gravy granules and adding boiling water until it reaches your preferred consistency.
Step 4
To assemble the sandwiches, spread butter or light mayonnaise onto the bread, add a generous spoonful of stuffing, then top with the sliced chicken before adding the second slice of bread.
Step 5
This recipe makes around 6–7 sandwiches. Store them in the fridge for up to 4 days, or wrap individually and freeze. Defrost overnight in the fridge before eating. Enjoy!
