This one pan chicken and sausage pasta is perfect for meal prep. Simply allow it to cool before dividing into airtight containers. Store in the fridge for up to 4 days and reheat in the microwave until piping hot. You may want to add a splash of water before reheating to loosen the sauce.
Can I freeze this chicken pasta?
Absolutely. Once cooled, transfer the pasta to freezer-safe containers and freeze for up to 3 months. Defrost overnight in the fridge before reheating thoroughly.
What sausages work best?
Any cooked sausages will work well in this recipe. Chicken sausages, pork sausages or even reduced-fat sausages are all great options. It’s also a brilliant way to use up leftover sausages from another meal.
Can I use a different type of pasta?
Yes. Fusilli works well because it holds onto the sauce, but penne, rigatoni, farfalle or macaroni are all good alternatives. Cooking times may vary slightly depending on the pasta shape.
Can I make this recipe without sausages?
Of course. Simply leave the sausages out and add a little extra chicken if you’d like to keep the protein high. You could also add mushrooms, peppers or spinach for extra vegetables.

Yes. This is a great fridge-clear-out recipe, so feel free to add peppers, mushrooms, spinach, courgette, sweetcorn or even frozen peas. Stir leafy greens through during the last few minutes of cooking.
Can I use chicken thighs instead of chicken breast?
Yes. Diced boneless, skinless chicken thighs work just as well and stay lovely and juicy. They may need an extra couple of minutes to cook through before adding the remaining ingredients.
How do I stop the pasta sticking?
Give the pasta a stir once or twice during cooking, especially halfway through. Keeping the pan covered helps the pasta cook evenly while preventing too much liquid from evaporating.
What should I serve with one pan chicken pasta?
This recipe is a complete meal on its own, but it’s also delicious served with garlic bread, a crisp green salad or steamed vegetables.
Method
Step 1
Heat the olive oil in a large deep frying pan or casserole dish over a medium-high heat. Add the diced chicken, season with salt and pepper, and cook for 4–5 minutes until lightly golden.
Step 2
Stir in the oregano, garlic, chilli flakes, tomato purée and Worcestershire sauce (if using). Cook for 1 minute.
Step 3
Add the chopped tomatoes, cherry tomatoes, fresh basil and sliced cooked sausages. Give everything a good stir.
Step 4
Pour in the chicken stock, then add the dry pasta. Stir well, bring to a gentle simmer, cover with a lid and cook for around 15 minutes, stirring once or twice, until the pasta is tender and most of the liquid has been absorbed.
Step 5
Stir through the crème fraîche until the sauce is creamy. Lay the cheese slices over the top, pop the lid back on for a minute or two and let the cheese melt into the pasta.
Step 6
Finish with a little black pepper and some extra fresh basil, then serve straight away. Enjoy!

1 tsp chilli flakes
2 tsp oregano

300g fusilli
20g fresh basil leaves, torn

3-4 cooked sausages
