My mum used to make slow cooker ham when I was a child and it was my absolute favourite. Perfect coming into the colder months.

Method

Step 1

Place the gammon into the slow cooker with 500ml of chicken stock and cook on high for 6-8 hours. 

Step 2

Remove the gammon from the slow cooker and shred the ham on a chopping board or plate, then prepare a creamy parsley sauce in a pan.  

Step 3

You can use shop bought sauce, but to make it from scratch simply add your butter to a medium heat and let it melt, turn down the heat to medium-low then add your flour to make a paste. Gradually add the milk, one tablespoon of mustard, fresh parsley and black pepper and mix until you reach your desired consistency. Feel free to add more milk if it’s too thick.

Step 4

Serve the shredded ham with some mashed potato, garden peas and that gorgeous parsley sauce. You’re gonna love it.

500ml of chicken stock

For the creamy parsley sauce: 

600ml milk 

50g butter  

35g plain flour  

1 tbsp wholegrain mustard  

Handful of fresh parsley, finely chopped
