This is one of those recipes that's almost too simple, but it's so good. Crispy bread, tomatoes, olive oil, and a pinch of salt. Absolute perfection, especially in the summer.

Method

Step 1

Grate your tomatoes and then add to a siv to remove any excess water. Add the tomato mix to a bowl then add salt and olive oil and give it a mix.

Step 2

Slice and toast your sourdough then rub a garlic clove over the bread, then top with the tomato mix. Slice and enjoy 🙂
