Method
Step 1
Toss the sweet potatoes with the olive oil, garlic powder, paprika and oregano. Air-fry at 200°C for 15-20 minutes, shaking the basket halfway through.
Step 2
About 10 minutes before the potatoes are cooked, heat a frying pan over a high heat. Season the steak with the olive oil, garlic powder and some salt and pepper. Once the pan is hot, sear the steak for 2–3 minutes on each side, or until cooked to your liking.
Step 3
To make the sauce, you have two options. For a richer, saucier steak, leave the steak in the pan and add the onion, cooking for 4-5 minutes until softened. Alternatively, transfer the steak to a plate to rest before making the sauce in the same pan. Stir in the chipotle paste, honey, and chicken stock, then bring to a boil. Simmer for 1–2 minutes, then reduce the heat and stir in the crème fraîche. Cook gently until heated through and the sauce is smooth.
Step 4
Divide the steak, sauce and sweet potatoes between four plates, garnish with the coriander and enjoy!

1kg sweet potatoes, peeled and cut into bite-sized pieces
1 tbsp olive oil
1 tsp garlic powder
½ tsp paprika

small handful of chopped fresh coriander, to garnish
Sauce (you can pour this over the steak or potatoes)

2 tbsp chipotle paste
2 tbsp runny honey
100ml chicken stock
