Slow Cooker Pesto, Parmesan, Garlic Chicken & Potatoes

Juicy chicken with potatoes cooked in garlic, pesto, parmesan and chicken juices, a gorgeously lazy dish and absolutely unreal. This recipe serves 3 but you can add another chicken breast to stretch to 4 or 5.

Method
Step 1
Add the potatoes, pesto, garlic, rosemary, salt and pepper to the slow cooker.
Step 2
Add in 2 tsp of butter.
Step 3
Coat your chicken in a tsp of Cajun or paprika and pan fry for 1 minute each side just to seal it.
Step 4
Add the chicken on top of the potatoes, sprinkle with Parmesan and cook on high for 3 hours.
Step 5

Ingredients
500g (1 pound) cubed potatoes
1 tsp cajun
3-4 chicken breasts (Coated in a Tsp of paprika or Cajun and seal for one minute on a pan)
2 tbsp of pesto of your choice
1 tsp rosemary
2 tbsp half fat butter
5 crushed garlic cloves
Salt and pepper
10g (0.7 oz) Parmesan then 10g for topping the bowls
