Method

Step 1

Add all the ingredients to the slow cooker apart from the milk, cornflour, pastry and egg. Give that all a stir, then cook on high for 3–4 hours or low for 6–7 hours.

Step 2

Once cooked, mix 2 tbsp of the slowcooker liquid with the cornflour to make a slurry. Stir this back into the slow cooker, then add the 150ml milk (or creme fraiche). 

Step 3

Give everything a good stir then top with 6–8 sheets of filo pastry. Brush the pastry with beaten egg, then pop the slow cooker pot into the oven and at 180°C for 20–25 minutes, until golden and crispy.

Step 4

Serve with some creamy mash and some peas and enjoy 🙂

1 leek, chopped

2 carrots, peeled & diced

1 onion, diced

200g sweetcorn, drained

3–4 garlic cloves, crushed

1 tbsp Dijon mustard

2 bay leaves

1 tsp oregano

1 tsp nutmeg

350ml chicken stock

150ml milk (or creme fraiche) 

2 tbsp cornflour

6–8 sheets filo pastry

1 egg, beaten
