Why does soup at weddings always taste so much better? This creamy vegetable soup is simple, comforting and packed with flavour. I made mine in a pot on the hob, but you can easily make it in the slow cooker too.

What is Irish Wedding Soup?

My Irish Wedding Soup is a creamy vegetable soup made with potatoes, carrots, celery, leeks and onions. I blend everything until smooth and finish it with a little double cream.

I call this Irish Wedding Soup because it reminds me of the creamy vegetable soup often served at Irish weddings. It’s simple, comforting and full of flavour.

Can I make Irish Wedding Soup in a slow cooker?

Yes, you can. I simply add the ingredients to the slow cooker and cook until the vegetables are tender before blending the soup until smooth and creamy.

 

Can I make Irish Wedding Soup without cream?

Yes. I add double cream for extra richness, but you can leave it out if you prefer a lighter vegetable soup.

Can I make Irish Wedding Soup vegetarian?

Yes, I can easily make this vegetarian by swapping the chicken stock for vegetable stock and using a suitable vegetarian butter alternative if needed.

Yes, I can freeze the soup. I recommend freezing it before adding the cream, then adding the cream when reheating for the best texture.

How do I thicken Irish vegetable soup?

I use potatoes to naturally thicken my soup. Once they’re cooked, I blend everything together to create a thick and creamy texture without needing flour.

Can I use a food processor instead of a hand blender?

Yes. If I don’t have a hand blender, I can carefully transfer the soup to a food processor or blender and blend until smooth.

What can I serve with Irish Wedding Soup?

I love serving this soup with fresh chives and a crusty baguette. Some warm homemade bread would also work really well.

Can I use dried herbs instead of fresh?

Yes. I use fresh rosemary and thyme, but dried herbs can be used if that’s what you have available. I’d start with a smaller amount and add more to taste.

Method

Step 1

Melt the butter in a large saucepan or casserole dish over a medium heat. Add the onion and leeks and let them soften for a few minutes.

Step 2

Add the potatoes and carrots, followed by the bay leaves, rosemary, thyme, nutmeg and oregano. Season with salt and pepper, then pour in the chicken stock.

Step 3

Bring to a simmer, cover with a lid and cook for around 30 minutes, or until the potatoes and carrots are nice and tender.

Step 4

Remove the herbs and bay leaves, then use a hand blender to blitz the soup until smooth and creamy.

Step 5

Stir through the double cream, then serve with some fresh chives and plenty of crusty baguette for dipping.

Ingredients

50g butter

1 onion, diced

2 potatoes, peeled and chopped

3 carrots, peeled and chopped

3 celery sticks, diced 

2 leeks, chopped

2 bay leaves

1 sprig of rosemary

2–3 sprigs of fresh thyme

1 tsp nutmeg

1 tsp oregano

1.2L chicken stock

Salt and pepper, to taste

To serve:

100ml double cream

Fresh chives, chopped

Crusty baguette
