This is my favourite sandwich in the whole entire world. However, in Ireland this sandwich is traditionally served at Irish funerals 😅

Method
Step 1
Boil your eggs (however you like them… you can boil them in water, in the microwave, or air fryer). For hard-boiled eggs, simmer them in water for about 9-12 minutes for a fully set yolk. If using a microwave, place them in a microwave-safe bowl with water and microwave on high for about 10-12 minutes. In an air fryer, cook at 270°F (130°C) for 15 minutes. Adjust the time slightly based on your preference.
Step 2
Peel your eggs and pop them into a bowl and start mashing them with a fork. Add 2-3 tbsp of light mayo, with dijon mustard, chopped chives, diced spring onion, salt and pepper
Step 3
Once mixed add the mixture to your sandwich along with some shredded lettuce
Step 4
Enjoy – these are super high in protein lunch 😊

3 boiled eggs
2 tbsp light mayo
1 tsp Dijon mustard
Handful of chopped chives
Handful of chopped spring onion
Salt and pepper
