How can I prepare low-calorie breakfast muffins in an air fryer?

Whipping up low-calorie breakfast muffins in the air fryer is quick, effortless, and perfect for batch cooking. Simply combine eggs, spinach, peppers, and a lean protein like turkey bacon in a bowl. Pour the mixture into a silicone muffin tray (or cups) and place them in the air fryer basket. For extra convenience, I like to cook my bacon (whether it’s turkey bacon or bacon medallions) in the air fryer at 180°C (355°F) for 8 minutes. Air frying not only speeds up the process but also reduces the need for oil, making these breakfast muffins a healthier and meal-prep-friendly option.

What are some meal prep ideas for low-calorie breakfast muffins?

For meal prepping, consider making a variety of air fryer breakfast muffins to keep things exciting. Some options include ham and cheese, or even feta and spinach. Once cooled, store your batch-prepped muffins in an airtight container in the fridge for up to five days. Grab one each morning for a nutritious, on-the-go breakfast that’s low in calories and high in convenience.

Can I freeze batch-prepped breakfast muffins?

Freezing batch-prepped breakfast muffins is a fantastic way to save time during busy mornings. After cooling, wrap each muffin individually in cling film or foil, place them in a zip-lock bag, and store in the freezer for up to three months. To reheat, simply pop them in the air fryer at 160°C (320°F) for 5-7 minutes or microwave for 1-2 minutes. This ensures your breakfast remains fluffy and delicious.

What are some low-calorie ingredients suitable for breakfast muffins?

Low-calorie ingredients that work well for breakfast muffins include egg whites, spinach, tomatoes, mushrooms, peppers, onions, and lean meats like turkey or chicken sausage. Adding herbs and spices such as chives, paprika, or black pepper boosts flavour without extra calories. These healthy ingredients ensure your muffins are nutrient-dense and perfect for air fryer meal prep.

How do I prevent meal prep breakfast muffins from becoming soggy?

To keep your meal prep breakfast muffins from becoming soggy, let them cool completely before storing. Use paper towels to line your container to absorb any excess moisture. If reheating in the air fryer, this helps restore the muffins’ crispy edges while keeping the inside fluffy and warm — perfect for a quick, healthy breakfast.

Batch prepping low-calorie breakfast muffins with your air fryer is a game-changer for busy mornings. Not only are these muffins healthy and delicious, but they’re also easy to customise, store, and reheat — making them the perfect solution for a nutritious, hassle-free breakfast routine!

Method

Step 1

Preheat the oven to 180°C (355°F)

Step 2

In a blender, combine your eggs with 2 tbsp cottage cheese, salt, and pepper. Blend (just a few pulses) to mix without incorporating too much air.

Step 3

Take a non-stick muffin tray and add 1 tsp of chopped red peppers, a pinch of spinach, and a sprinkle of grated cheese into each cup. Pour the egg mixture, then bake for 25-30 minutes.

Step 4

While the egg bites are baking, air-fry some bacon medallions at 180°C (355°F) for 8 minutes until crispy.

Step 5

Once everything’s ready, assemble your breakfast muffin, and finish with your favourite sauce.

7 eggs
