I always end up having leftover rice when making dinner and this is a great way of using it up, using two other ingredients, chocolate and your favourite protein powder. What ingredients do I need to make this protein mousse?

You’ll need cooked rice (leftover rice works great), your favourite protein powder (whey or plant-based), and dark chocolate or cocoa powder.

No, the rice blends smoothly and isn’t noticeable at all. The mousse has a creamy texture and delicious flavour thanks to the protein powder and chocolate.

Method

Step 1

Start by melting dark chocolate. Personally, I use hot water and melt over the hob for a few minutes, but you can use the microwave too.

Step 2

In a blender, add your cooked rice, hot water, melted chocolate and your protein powder. Blend until it’s nice and smooth.

Step 3

Pour the mixture into a bowl and pop it into the fridge it for a couple of hours, or until it sets.

Step 4

When serving, dust with some chocoa powder and enjoy. It’s sooo good.

200g (1 cup) boiled rice
120ml (1/2 cup) hot water
1-2 tbsp protein powder

Cocoa powder, for dusting (optional)
