What is Cornflake Brittle?

 

 

Cornflake brittle is a crunchy, caramelised snack made by coating cornflakes in a sweet, buttery syrup that hardens as it cools. Itā€™s similar to nut brittle but uses cornflakes instead of nuts, giving it a crispy texture with a sweet and slightly chewy bite. Often enjoyed as a quick homemade treat, cornflake brittle can also be coated in chocolate for extra flavour.

 

 

What Ingredients Do You Need for Cornflake Brittle?

 

To make classic cornflake brittle, youā€™ll typically need cornflakes, brown sugar and butter.

 

Why Is My Cornflake Brittle Too Soft?

 

 

If your cornflake brittle is too soft, it likely didnā€™t reach the correct temperature or set properly. To fix this, you need to bake the cornflake brittle in the oven to help in harden.Ā  Once baked, allow it to cool completely, as brittle needs time to firm up before breaking it apart. Letting it set properly will ensure it develops the perfect crunchy texture.

 

How Long Does Cornflake Brittle Last?

 

Cornflake brittle lasts up to 2 weeks when stored properly. The texture remains crisp if kept in an airtight container at room temperature. However, humidity and exposure to air can cause it to become sticky or soft over time.

 

 

How Do You Store Homemade Cornflake Brittle?

 

To keep cornflake brittle fresh and crunchy:

 

  • Store it in an airtight container at room temperature.
  • Keep it in a cool, dry place, away from moisture and heat.
  • Separate layers with parchment paper to prevent pieces from sticking together.
  • Avoid refrigeration, as this can cause the brittle to absorb moisture and become chewy instead of crisp.

Method

Step 1

Add your diced butter and brown sugar to a saucepan and cook on medium heat until it starts to bubble.Ā Ā 

Step 2

To a large bowl, add your cornflakes and the sugar/butter mixture then add to a lined baking tray.Ā Ā 

Step 3

Cook for 10-12 minutes at 180 then leave to cool.Ā 

Step 4

Break up into small pieces and enjoy on their own or for the ultimate treat, dip in melted chocolate.Ā
