These 3 ingredient cookies are the perfect easy snack when you fancy something sweet but don’t have much in the cupboards. Made with just banana, desiccated coconut and dark chocolate, they’re naturally sweet, chewy and really easy to make. They’re also a great fridge raid snack for using up ripe bananas and can be made in either the oven or air fryer.

If you leave out the chocolate, you’ve got simple 2 ingredient cookies made with just banana and coconut. The banana adds natural sweetness and helps bind everything together, while the coconut gives the cookies a lovely chewy texture. Add dark chocolate for an extra treat.

Are these 2 ingredient cookies?

Yes. The banana and coconut make the basic cookie, so you can leave out the dark chocolate if you want a simple 2 ingredient cookie. The chocolate is there to make them a little more indulgent, but the recipe works perfectly well without it.

Can you make these cookies in an air fryer?

Yes. These 3 ingredient cookies work really well in the air fryer and are a great option when you don’t want to turn on the oven. Cook them in a single layer, leaving a little space between each cookie, until golden around the edges.

 

 

Can I make these into 2 ingredient cookies?

Absolutely. Simply leave out the dark chocolate. You’ll have an easy banana and coconut cookie made with just two ingredients.

 

 

How can I store these cookies?

Store the cookies in an airtight container in the fridge for up to 3 days. They can also be frozen, making them handy for a quick snack whenever you need one.

Method

Step 1

Mash the bananas in a bowl, then stir through the desiccated coconut until well combined.

Step 2

Divide the mixture into 12 small balls and place on a lined baking tray. Flatten each one into a cookie shape using your fingers or the bottom of a glass.

Step 3

Bake at 160°C for around 15 minutes, until lightly golden. Leave the cookies to cool completely. Meanwhile, melt the dark chocolate, then drizzle it over the cookies. Finish with a pinch of sea salt, if you like.

Step 4

Leave the chocolate to set, then enjoy 🙂
