There’s nothing quite like a hot bowl of homemade soup when the colder months arrive. It’s comforting, filling and one of the easiest ways to turn simple, affordable ingredients into a meal the whole family can enjoy. Better still, you don’t need to spend hours standing over the hob to make a really good soup. With a slow cooker to gently bring everything together and an air fryer to add those deliciously crispy finishing touches, you can create big flavours with minimal effort.
At Bored of Lunch, I’m all about proving that healthy, satisfying food doesn’t have to be complicated or expensive. Soup is a perfect example. A few vegetables, some stock, beans, lentils or leftover ingredients can go a surprisingly long way, helping you save money while reducing food waste. In this blog, I’ll show you how to make the most of your slow cooker and air fryer, share some of my favourite soup ideas, and explain how a few simple tricks can take your homemade soup from everyday to seriously comforting.
First and foremost, soup is the king of budget-friendly cooking. When the cost of living is biting and grocery bills seem to creep up every week, a big batch of homemade soup can stretch your ingredients further than almost anything else. A humble bag of carrots, a couple of spuds, an onion and some stock can be transformed into enough lunches or dinners to feed the whole family for days.
Soup is also a brilliant way to reduce food waste. We’ve all been there: you open the crisper drawer and find a lonely pepper starting to wrinkle, a bunch of carrots that have seen better days or half a cauliflower looking a little sorry for itself. Instead of throwing perfectly good food into the bin — soup gives those ingredients a second lease of life. Once they’re roasted, simmered, blended and properly seasoned, even the most humble vegetables can become something seriously delicious.
You might be wondering why I’m such a big fan of using slow cookers and air fryers when it comes to making soup. Quite simply, these two kitchen appliances can take the effort out of cooking while helping you create meals that are packed with flavour. They each have their own strengths, but when you use them together, they can transform a simple bowl of soup into something really special.

A proper spicy twist on your standard tomato soup. We’re slow-cooking tomatoes with garlic, onions, and a cheeky hit of chilli to give it some real warmth. It’s tangy, punchy, and practically begs to be mopped up with a crusty chunk of sourdough or a banging grilled cheese.
A thin consistency can be easily adjusted using one of two methods:
Soup freezes like an absolute dream! Most vegetable, broth, and pulse-based soups will keep safely in the freezer for up to 3 months. Make sure you let the soup cool completely before transferring it to freezer-safe containers or silicone freezer bags. Leave a little bit of headspace at the top because liquids expand as they freeze. To reheat, thaw overnight in the fridge and warm up gently on the hob or in the microwave.
Not at all! For many vegetables like carrots, parsnips, and potatoes, as long as they are washed thoroughly to remove any dirt, the skins contain loads of extra fibre and nutrients. In fact, if you are blending your soup anyway, you won’t even notice the skins are there. Save yourself precious prep time and skip the peeler.Â
A standard jug blender works brilliantly, but remember to let hot soup cool slightly before blending, and remove the small centre cap from the lid, covering it with a tea towel to let the steam escape so your kitchen doesn’t turn into a pea-soup explosion zone! If you have a stick blender (immersion blender), you can blend right in the pot or slow cooker insert, which makes cleanup an absolute breeze.
As soup season gets into full swing, dusting off your slow cooker and firing up your air fryer is the easiest way to serve up proper, comforting meals without blowing your grocery budget. By turning everyday ingredients and kitchen leftovers into rich, hearty broths, you can eat well, cut right down on food waste, and keep things simple.
Keeping a dedicated “Soup Scraps” bag in the freezer is a practical way to maximise ingredients. Clean vegetable ends, peels, and trimmings from items like onions, carrots, leeks, and celery can be collected over time. Once full, these scraps can be boiled with water and herbs to produce a rich, homemade vegetable stock at no extra cost.
Meat is frequently one of the most expensive components of a grocery shop, but soup allows small portions to stretch much further. A single pack of bacon lardons or chorizo can successfully flavor a large pot of beans or lentils. Additionally, tinned pulses (such as cannellini beans, butter beans, chickpeas, and lentils) provide an economical, high-protein alternative that adds a rich texture while keeping meals budget-friendly and filling.
Soups are brilliant for meal-prep dump bags. You can chop all your raw veg, herbs, and meat straight into a ziplock bag or container, keep it in the fridge for a couple of days, or freeze it for up to three months. When you’re ready, just defrost, tip the whole lot into your slow cooker with your stock, and let it do its thing. It’s hands down one of the easiest ways to sort out busy weeknights with zero hassle.
