Ingredients – 2 x onions – 2 x carrots – 3 celery sticks – 3 garlic cloves – 1 bay leaf – Salt & pepper – 1.5L of chicken stock – 300g dry orzo pasta – 75g of Parsmesan to garnish – Fresh thyme to garnish Method 1. Add half the stock and all other ingredients apart from the pasta and Parmesan to the slowcooker. Cook on high for 3 hours 2. Blitz, add in the Orzo, remaining stock and cook for another 40-45 mins. Method
Step 1
Begin by pouring half of the chicken or vegetable stock into the slow cooker, followed by all of the other ingredients apart from the pasta and parmesan.
Step 2
Set your slow cooker to the high setting and let the ingredients simmer together for about 3 hours.
Step 3
After 3 hours of simmering, blitz the broth and add the orzo pasta to the mix along with the remaining stock and cook for another 40-45 minutes.
Step 4
Once the orzo is cooked , it’s time to add the finishing touches. Sprinkle generous amounts of grated Parmesan cheese over the top of the dish and garnish with black pepper and chopped fresh herbs, such as parsley or basil.
Step 5
Serve your slow cooker Italian orzo piping hot. Buon appetito!
