Using a slow cooker allows you to prepare delicious meals without spending hours in the kitchen. Simply add your ingredients, set the timer, and let your slow cooker do the work. This method not only enhances the flavours but also ensures that your chicken remains juicy and tender.

 

Ingredients for a Perfect Chicken Stew

 

To make an easy and satisfying slow cooker chicken stew, you’ll need:

 

  • Chicken: Thighs or breasts work well.
  • Vegetables: Carrots, potatoes, and onions add depth.
  • Herbs & Spices: Fresh thyme, rosemary, and bay leaves infuse flavour.
  • Broth: Chicken broth serves as the base for a rich stew.
  • Thickening Agent: Cornstarch or flour can be used to achieve the desired consistency.

Method

Step 1

Add all your ingredients to the slow cooker apart from the creme fraiche, Dijon mustard, ham hock and parsley and cook on low for 8 hours or high for 4 hours.

Step 2

Once your slow cooker chicken stew is ready, stir in your creme fraiche, mustard and add a handful of shredded ham hock (I used shop bought) along with some fresh parsley.

Step 3

Serve with some crusty bread and get stuck in. Enjoy 🙂

Skinless, boneless chicken thigh

600g baby potatoes, halved

500g carrots, sliced

1 leek, chopped

2 celery sticks, chopped

400ml chicken broth   

1 tbsp garlic puree   

1 tsp dried sage   

1 tsp dried oregano    

2 twigs fresh rosemary   

3 tbsp creme fraiche  

1 tbsp Dijon mustard  

Handful of fresh parsley, chopped  

Shredded ham hock (optional)
