Slow Cooker Chicken Stew

Who doesn’t love stew? Perfect for the colder evenings where you want a nice, comforting meal. Packed with tender chicken thigh, a rich creamy broth, and a variety of vegetables. Simply toss in your ingredients, set it to low, and let your slow cooker work its magic while you relax (or work!)
Method
Step 1
Add everything to the slow cooker apart from the creme fraiche, Dijon mustard, ham hock and parsley and cook on low for 8 hours or high for 4 hours.
Step 2
Once ready, stir in your creme fraiche, mustard and add a handful of shredded ham hock (I used shop bought) along with some fresh parsley.
Step 3
Serve with some crusty bread and get stuck in. Enjoy 🙂
Ingredients
skinless, boneless chicken thigh
600g baby potatoes, halved
500g carrots, sliced
1 leek, chopped
2 celery sticks, chopped
400ml chicken broth
1 tbsp garlic puree
1 tsp dried sage
1 tsp dried oregano
2 twigs fresh rosemary
3 tbsp creme fraiche
1 tbsp Dijon mustard
Handful of fresh parsley, chopped
Shredded ham hock (optional)
