As the temperatures drop and the leaves start to change, there’s nothing quite like a warm, comforting stew to satisfy your cravings. This Slow Cooker Marry Me Chicken Stew puts a delicious twist on the viral “Marry Me Chicken” recipe, perfect for the colder months ahead. Tender chicken breasts are simmered to perfection in a creamy, flavourful sauce infused with sun-dried tomatoes, garlic, and herbs. The slow cooker does all the work, leaving you with a satisfying meal that’s sure to impress.
Method
Step 1
Mix together your dry seasonings (paprika, cajun, oregano and thyme) and coat the chicken. Panfry for 2-3 minutes on each side then add all of the ingredients to the slow cooker apart from the basil, parmesan and cream.
Step 2
Cook on high for 4 hours or low for 8 hours.
Step 3
Once cooked, remove the chicken breasts and shred, then add your cream, basil, parmesan and more sundried tomatoes if you’d like. Give the stew a good stir then you’re ready to serve.
Ingredients
4-5 large potatoes, peeled and quartered
3-4 chicken breasts
1.2L chicken stock
400ml (one tin) passata
1 tbsp red pesto
1 tsp garlic puree
1 onion, finely chopped
1 tbsp paprika
1 tsp cajun
1 tsp oregano
1 tsp thyme
2-3 sprigs of fresh thyme
250ml double cream (or cream cheese)
Handful of sundried tomatoes
Handful of basil (or spinach)
1-2 tbsp parmesan
Salt and pepper
