Method
Step 1
Add all ingredients to the slowcooker apart from the rice, cheese and garnish. Cook on high for 3-4 hours or low for 6+.
Step 2
Add in the rice (rinsed under cold water) with the hot stock and cook for 45 mins on high
Step 3

Ingredients
700g (1 lb 9 oz) beef strips or thin steaks cut up
1 sachet of taco seasoning (25g or 1 oz)
1 onion
1 red pepper
2 garlic cloves
1 can of tomato passata – roughly 400g or 14 oz
1 tbsp tomato purée
Salt and pepper
300g (10 1/2 oz) dry uncooked rice
600ml (20 fl oz) of chicken or veg stock – beef is too rich
Handful of coriander to garnish
1 handful of cheddar
Taco dressing optional
