What cut of beef is best for this slow cooker recipe?
For flavourful slow cooker beef recipes, tougher cuts like beef brisket, chuck, or shin work brilliantly. These cuts become melt-in-the-mouth tender after several hours of slow cooking.
Can I use minced beef instead?
Minced beef can be used if that’s what you have to hand, but for the full Thai basil flavour and tender texture, diced beef or stewing steak is recommended in this slow cooker dish.
Is Thai basil essential, or can I use regular basil?
Thai basil has a distinctive, slightly spicy flavour with a hint of aniseed. If you can’t get Thai basil, you can use regular basil, but the final flavour will be a little milder. Add a few torn mint leaves to mimic that unique Thai taste.

Method
Step 1
Place all the ingredients in the slow cooker, stir and season to taste. Cook on high for 2½–3 hours or low for 5 hours. If you would like the sauce to be thicker, stir in another teaspoon of cornflour mixed to a paste with a little water.

500g (1lb 2oz) beef steaks, thinly sliced
5 garlic cloves, crushed
1 tsp chilli flakes
1 tsp ancho chilli flakes
1 tbsp dried basil or Thai holy basil paste
1 tbsp Thai fish sauce
1 tbsp sugar
3 tbsp soy sauce
2 tbsp orange juice
1 heaped tbsp cornflour, mixed to a paste with 1 tbsp water
3 tbsp honey
1 red pepper, sliced
Handful of mushrooms, halved
250ml (1 cup) chicken stock
Salt and pepper, to taste
