A ham is not just for Christmas – I make this all year round and the slow-cooker method takes the stress out of it.

Soak the ham overnight in cold water to take the salt out before cooking. I’ll let you into a little secret – I always buy an extra-large ham so there are plenty of succulent leftovers to keep me in sandwiches for days afterwards.
What’s the best cut to use – ham or gammon?
In the UK, the terms ham and gammon are often used interchangeably. Gammon is the raw, cured joint you cook, while ham is the cooked version. For this slow cooker recipe, start with an unsmoked or smoked gammon joint – both work well depending on your taste.
Do I need to soak the gammon first?
If you’re using a gammon joint that’s been heavily cured or salted, it’s worth soaking it in cold water for a few hours or overnight to reduce the saltiness. However, many supermarket joints these days don’t require soaking – just check the label.
Can I use wholegrain mustard instead of Dijon?
Yes. Wholegrain mustard adds a lovely texture and a milder flavour, while Dijon gives it a smooth, punchy taste. Feel free to use whatever mustard you prefer – or even mix a couple together for your own twist.
Do I need to add water or stock to the slow cooker?
For this slow cooker ham, a splash of water, apple juice or low-salt stock can help keep the meat moist and stop it sticking. The gammon will release some liquid as it cooks, so don’t overfill the pot.
Can I glaze the ham after slow cooking?
Absolutely – for that classic sticky finish, pop the ham under the grill or into a hot oven for 10–15 minutes after slow cooking. Brush it with extra honey and mustard before glazing for best results.
How long should I cook honey & mustard ham in the slow cooker?
Cook on low for 6–8 hours or high for 3–4 hours, depending on your schedule and the size of your gammon joint.
Can I serve this cold as well as hot?
Yes – this makes a brilliant centrepiece for Sunday roasts or festive meals but is just as delicious cold in sandwiches, salads or even with a jacket potato.
Can I freeze leftovers?
Definitely. Slice or shred the leftover ham, let it cool completely, then freeze in airtight containers for up to 3 months. It’s great for quick lunches or speedy dinners.

Method
Step 1
Place half the orange slices in the bottom of the slow cooker and place the ham on top. Add the cloves, cinnamon, star anise, bay leaf and cider and cook on high for 4–5 hours or low for 7–8 hours. Allow to cool. You can also stud the ham with cloves for extra flavour, if you like.
Step 2
Place the remaining orange slices in an ovenproof dish and place the ham on top. Trim the skin and/or fat off the ham until just a thin layer of fat remains, then score it in a criss-cross pattern. Brush the ham with the honey and mustard, then cook in an oven preheated to 190˚C (375˚F) for 25–30 minutes, basting every 10 minutes.

500ml (2 cups) cider
6 tbsp honey
1 tbsp mustard
