Method
Step 1
Peel, chop and cube your sweet potatoes into bitesize chunks, pop into a bowl with a drizzle of olive oil, Cajun, salt and pepper and give that a good mix. Add them to the airfryer and cook for 18-20 minutes at 200°C (390°F).
Step 2
While they are cooking, grab your chicken thigh and add to a bowl with a drizzle of oil, harissa paste, lemon, Cajun, cumin, salt and pepper. Mix through then add to your second air fryer drawer (if you have one) and cook for 14-16 minutes at 200°C (390°F).
Step 3
While that is cooking, prepare a quick chipotle mayo by mixing some Greek yoghurt with a tsp of chipotle paste ad give that a good mix.
Step 4
When everything is cooked, add some spinach and sweet corn to a bowl with some avocado, sliced chicken, some air fryer sweet potatoes and your chipotle mayo. Top with some crushed tortilla chips and enjoy 😊

500g (14 oz) skinless, boneless chicken thighs
Drizzle of olive oil
2 tbsp harissa paste
Juice of 1 lemon
1 tsp Cajun seasoning
1 tsp ground cumin
Salt and pepper, to taste
Sweet potatoes, cubed
1 tsp paprika or Cajun
Salt and pepper
Handful of spinach
1/2 can of sweetcorn
1 large avocado, cut into cubes
Handful of tortilla chips, crushed
2 tbsp Greek yoghurt (0% fat)
1 tsp chipotle paste
