Absolutely. These cookie dough breakfast bars are perfect for meal prep. Make a batch at the start of the week, store them in an airtight container in the fridge, and grab one for a quick, on-the-go breakfast or snack.

Method

Step 1

Line a square baking tin (approximately 22cm) with greaseproof paper.

Step 2

Mix all the ingredients together in a large bowl, then transfer to the tin, gently pressing down until the top is smooth.   

Step 3

Bake for 18–20 minutes at 180°C in the air fryer or 25 minutes in the oven at 180°C/160°C fan.)   

Step 4

Once cooked, allow to cool in the tin, then slice into 16 bars.

225g jumbo oats   

75g chocolate chips   

50g honey   

1 ripe banana, mashed  

A pinch of salt   

1 tsp vanilla extract  

100ml semi-skimmed milk  

2 eggs
