Batch Friendly Cheeseburger Tacos

I think this might be one of my favourite recipes I've made in ages. Basically a Big Mac in taco form and they're so easy to make. The best bit is you can batch prep and freeze them, so you've always got a handy dinner ready to go for those nights when you really can't be bothered cooking.

What are cheeseburger tacos?

Cheeseburger tacos are a cross between a classic cheeseburger and a taco. I make mine by spreading seasoned beef mince over mini soft tortillas, air frying them until the beef is cooked, then adding melted cheese, lettuce, gherkins and homemade burger sauce.

Are these cheeseburger tacos the same as Big Mac tacos?

These cheeseburger tacos are inspired by the flavours of a McDonald’s Big Mac. I’ve used seasoned beef mince, melted cheese, shredded iceberg lettuce, chopped gherkins and a homemade burger sauce to recreate those familiar Big Mac flavours.

Can I cook cheeseburger tacos in the air fryer?

Absolutely. I cook my cheeseburger tacos in the air fryer at 200°C for 7–8 minutes, adding the cheese for the final minute so it melts. Cooking times can vary depending on your air fryer and the thickness of your beef, so always check that the mince is cooked through before serving.

Can I make cheeseburger tacos ahead of time?

These are brilliant for batch cooking. I prepare the tacos by spreading the seasoned beef mince over the mini tortillas, then stack them with a piece of greaseproof paper between each one. I pop them into a freezer bag so they’re ready to cook whenever I need a quick dinner.

Can you freeze cheeseburger tacos?

Yes, you can freeze these cheeseburger tacos before cooking. Once you’ve spread the seasoned beef mince over the tortillas, separate each one with greaseproof paper and store them in a freezer-safe bag or container. Cook them from frozen in the air fryer, allowing extra time and checking the beef is piping hot and cooked all the way through before serving.

How do I stop the mince falling off the tortilla?

The trick is to spread the beef mince in a thin, even layer right to the edges of the tortilla. Press it down firmly so it sticks to the surface. I also recommend using mini soft tortillas rather than crispy taco shells, as they hold the mince much better.

What sauce do you use for Big Mac tacos?

I make a really simple homemade burger sauce using light mayonnaise, tomato ketchup, mustard, garlic puree and a dash of gherkin juice. It gives the cheeseburger tacos that familiar Big Mac-style flavour without needing lots of ingredients.

What toppings go well with cheeseburger tacos?

I keep mine simple with shredded iceberg lettuce, chopped gherkins, melted cheese and homemade burger sauce. You could also add diced red onion, sliced tomatoes, jalapeños or crispy onions if you fancy changing things up.

What type of mince is best for cheeseburger tacos?

I use 5% lean beef mince for this recipe, as it keeps the cheeseburger tacos a little lighter while still giving them plenty of flavour. You can use other types of beef mince, but I recommend lean mince to avoid too much excess fat collecting in the air fryer.

Can I make mince tacos without an air fryer?

You can cook these mince tacos in a frying pan instead. Place the tortilla beef-side down in a preheated non-stick frying pan and cook until the beef is browned and cooked through. Flip it over, add the cheese and allow it to melt before adding your toppings.

How long do cheeseburger tacos take to cook?

I cook mine in the air fryer at 200°C for around 7–8 minutes, adding the cheese for the final minute. They’re a really quick dinner option, especially if you’ve already prepared a batch and have them stored in the freezer.

What should I serve with cheeseburger tacos?

I usually serve these with homemade air fryer chips, sweet potato fries or a side salad. They’re also great with corn on the cob, potato wedges or some extra gherkins and burger sauce for dipping.

How do I store leftover cheeseburger tacos?

If you have any leftover cooked cheeseburger tacos, allow them to cool and store them in an airtight container in the fridge for up to 2 days. Reheat thoroughly until piping hot throughout. I recommend storing the fresh lettuce and sauce separately where possible.

Are cheeseburger tacos good for meal prep?

They’re perfect for meal prep. That’s one of my favourite things about this recipe. You can prepare 8–10 cheeseburger tacos in one go and freeze them individually, giving you a quick and easy dinner option for busy evenings when you don’t fancy starting from scratch.

Method

Step 1

Add the mince, onion powder, garlic powder, salt and pepper to a bowl and mix well.Roll into small meatballs and flatten onto each mini tortilla, spreading the mixture right to the edges.

Step 3

When ready to eat, air fry at 200°C for 7–8 minutes, until the beef is cooked through. Add your cheese for the final minute so it melts.
