Step 1
Cut your chicken breasts into bite size chunks and add to a bowl with all the ingredients above and mix until chicken is coated.

Airfry for 12-14 minutes at 180°C (355°F) or until cooked through.

Grab your brioche baps and add to an oven proof dish, add your mozzarella slices, your chicken then top with a nice tomato and coriander mix. Add the top of the buns and brush with some garlic butter. Airfry at 180°C (355°F) for 3-4 minutes (or until the cheese is nice and melted).

Coat 3-4 chicken breasts in:
2-3 tbsp Greek yoghurt
2tsp tandoori curry powder
1/2 tsp cumin
1tsp coriander
1/2 tsp garam masala
1 tsp garlic puree
Salt and pepper
½ lemon, squeezed
A few drops red food colouring (optional)

8 cherry tomatoes diced
Handful of fresh coriander
