Method
Step 1
Peel your potatoes and cut them into thin chip shapes. Spray them with oil and season with Bored of Lunch Goes On Everything seasoning. Air fry at 200°C for 14–15 minutes, shaking halfway through. Thicker chips may need a little longer.
Step 2
While the chips are cooking, brown the mince in a pan over medium heat. Add the chopped onion, garlic, and taco seasoning, and stir well. Then mix in the chopped tomatoes and tomato purée, season with salt and pepper, and let it simmer until thickened.
Step 3
If you’re making your own taco sauce, simply combine mayo, ketchup, apple cider vinegar, and 1 tsp taco seasoning in a small bowl and mix until smooth.
Step 4
To assemble, place the crispy chips in a bowl, top with the taco mince, sprinkle over the cheese, drizzle with your sauce, and finish with fresh chilli and coriander. Enjoy ❤️
