Method

Step 1

Pat the room temperature beef dry with kitchen paper, and then coat in oil, herbs and salt and pepper.

Step 2

Preheat the air fryer for 10 minutes at 200ºC (390ºF), add the beef in some baking paper (captures the juices and helps you baste). Cook for 10 mins then turn the beef and cook for another 25 mins at 170 (340ºF). If you can brush or baste throughout do so.

Step 3

Wrap in foil with the juices and rest for 20 minutes before serving.

Step 4

1.2Kg beef – I used a silverside but get whatever is cheapest or convenient

3 tbsp rapeseed oil

1 tsp mixed herbs

Salt and pepper

Baguettes or your bread of choice

Gravy or peppered sauce, you’ll have enough juices in the foil to make this from scratch
