Burrito bowls are a deconstructed version of a traditional burrito – served in a bowl instead of a wrap. They usually include rice, protein (like chicken or beef), beans, salsa, and toppings like cheese, avocado, or yoghurt. They’re perfect for a quick and easy dinner packed with flavour.

 

 

Can I cook the chicken in the air fryer?

Yes. This air fryer recipe uses the air fryer to cook the sticky lime and honey chicken perfectly—it’s quick, hands-off and gives a lovely crispy edge while keeping the inside juicy. It’s ideal for busy weeknights when you want an easy dinner with minimal fuss.

Absolutely. Burrito bowls are great for prepping ahead of time. Simply batch-cook the chicken in your air fryer, prep the rice and toppings, and store them in separate containers. Then just assemble when you’re ready to eat!

Method

Step 1

Season your chicken thighs with oil, paprika, cumin, cajun and garlic granules.

Step 2

Pop the seasoned chicken thigh in the air fryer for 12-15 minutes at 200°C (390°F).

Step 3

Whilst the chicken is cooking, prepare your marinade by mixing honey oil, coriander, fresh chilli, lime and lemon juice together. When the chicken has 5 minutes left, be sure to baste in some of the marinade.

Step 4

Begin assembling your burrito bowl by preparing some rice (I used microwave basmati and added a squeeze of lime and some chopped coriander) along with guacamole, sweetcorn salsa, sour cream, some cherry peppers and tortilla chips.

Step 5

Once the chicken is cooked, add to your burrito bowl and get stuck in!

Ingredients

Coat 600g boneless chicken thighs in: 
 

1 tbsp oil 

1 tsp paprika 

1 tsp cumin 

1 tsp cajun 

1 tsp garlic granules

For the lime honey marinade:  

1 tbsp olive oil 

2 tbsp honey

Coriander  

Fresh red chilli 

Juice of 1 lime 

Juice of 1 lemon 

Serve with: 

Basmati rice (mixed with lime juice and coriander)

100g sweetcorn salsa 

4 tbsp sour cream  

Guacamole 

Tortilla chips (optional)
