Air Fryer Bombay Fish Nugget Sandwiches🐟🍛 (Served with a curry mayo) 375 cals 
Crispy fish nuggets coated in a blitzed Bombay mix, a new addiction. If you love curry sauce with your fish, you need to try this. 
Ingredients:  * 2 cod fillets  * Bombay mix * 1 egg   * 1 tbsp curry paste  * 2 tbsp light mayo   * Handful of shredded lettuce (I used sweet gem)  * 3 Brioche buns  
Method:  1. Cut your cod into bitesize pieces or into fingers.   2. Blend your Bombay mix in a food processor. You can also bash the bag with a can or rolling pin 3. Dip the cod fingers into a beaten egg and coat in the Bombay crumb   4. Spray the fish fingers with some Frylight and cook at 180 for 10minutes  5. Prepare your curry mayo by adding 1 tbsp curry powder with 2 tbsp light mayo  6. Assemble your burger bun with some curry mayo, shredded lettuce and top with 2-3 fish fingers. Enjoy

Method

Step 1

Cut your cod into bitesize pieces or into fingers.  

Step 2

Blend your Bombay mix in a food processor

Step 3

Dip the cod fingers into a beaten egg and coat in the Bombay crumb  

Step 4

Spray the fish fingers with some Frylight and cook at 180°C (355°F) for 10 minutes 

Step 5

Prepare your curry mayo by adding 1 tbsp curry powder with 2 tbsp light mayo 

Step 6

Assemble your burger bun with some curry mayo, shredded lettuce and top with 2-3 fish fingers. Enjoy!
