Air Fryer Fish Nugget Sandwich
A delicious twist on the classic fish finger sandwich. If you love curry sauce with your fish, you need to try this.

These air fryer fish nuggets are spiced with Bombay mix, giving them a delicious curry flavour. Serve them on a brioche bun with curry mayo and lettuce for a simple yet satisfying meal. Method
Step 1
Cut your cod into bitesize pieces or into fingers.
Step 2
Blend your Bombay mix in a food processor
Step 3
Dip the cod fingers into a beaten egg and coat in the Bombay crumb
Step 4
Spray the fish fingers with some Frylight and cook at 180°C (355°F) for 10 minutes
Step 5
Prepare your curry mayo by adding 1 tbsp curry powder with 2 tbsp light mayo
Step 6
Assemble your burger bun with some curry mayo, shredded lettuce and top with 2-3 fish fingers. Enjoy!
