Step 1
Season your baking potatoes with olive oil, salt and pepper and pierce the potato with a fork. Once seasoned, pop the baking potatoes into the air fryer for 30 minutes at 200º (390ºF).
Step 2
While the baked potato is cooking, marinate your chicken thighs in 2 tsp of curry powder.
Step 3
When the baking potato is done, pop the chicken thighs into the air fryer with the baked potato for another 15 minutes at 200º (390ºF)
Step 4
Make your curry sauce using the mango chutney, curry powder, turmeric and light mayo.
Step 5
Take your cooked chicken thigh and chop and pop into your curry sauce and top the baked potato with the chicken curry mixture. The perfect filling for a baked potato in my opinion!
