Air Fryer Cauliflower & Aubergine Flatbreads with a Lime Yogurt

One thing I can't get enough of is flatbreads, and here is a delicious veggie version. Cauliflower and aubergine are both vegetables that take on flavour incredibly well, and here they're coated in spices before going into the air fryer, then paired with zesty tahini yogurt. Simple and so satisfying. I toast my flatbreads in the air fryer, but you could also do this in a dry frying pan.

You can use shop-bought or homemade flatbreads, including wholemeal, naan, or even wraps. Warm them briefly in the air fryer or microwave before serving.

Do I need to salt the aubergine before air frying?

Method

Step 1

Coat the cauliflower florets and aubergine slices in the oil and the spices, and season to taste with salt and pepper.

 

Step 2

Air-fry the coated cauliflower and aubergine slices for 14-16 minutes at 190°C (375°F).

Step 3

Combine all the yogurt ingredients in a bowl and mix to make your yogurt dressing.

Step 4

Toast the flatbreads in the air fryer at 190°C (375°F) for 1 minute, then top with the air-fried veg and garnish with the coriander.

Step 5

Ingredients

1 cauliflower, trimmed and cut into florets

1 aubergine, sliced

1 tbsp olive oil

1 tsp ground cumin

1 tsp ground turmeric

1 tbsp curry powder

1 tbsp paprika

1 tsp mild chilli powder

4 flatbreads

salt and pepper, to taste

fresh coriander, to garnish

pickled veg, jalapeño or red onion, to serve

hummus with a drizzle of olive oil, to serve (optional)

Yogurt: 1 tbsp tahini, zest of 1 lime and 6 tbsp natural yogurt
