There are so many ways to make the perfect roastie in an air fryer, one of them being to use a really low-calorie spray. You can do this if you want to reduce the calories as much as possible, but I find just adding a tiny bit of oil here really makes a difference to the taste. You can (and I do sometimes) cook these without parboiling the potatoes first, but it will mean you won’t get the insides as fluffy. Can you make proper roast potatoes in an air fryer?
Absolutely. Air fryers are brilliant for achieving crispy-on-the-outside, fluffy-on-the-inside roast potatoes with far less oil than traditional oven-roasting. This air fryer roast potatoes recipe with fresh rosemary is a healthier twist on the classic.
How long do air fryer roast potatoes take to cook?
Most air fryer potatoes take about 20–25 minutes at 200°C, depending on their size and how crispy you like them. Shake halfway through to ensure even cooking.
Do I need to parboil the potatoes first?
Parboiling helps achieve the fluffiest interior and crispiest edges. While you can skip it, parboiling for 5–7 minutes makes a big difference to your air fryer roast potatoes texture.
What type of potatoes work best for air frying?
Maris Piper or King Edward potatoes are ideal for roast potatoes in the air fryer. They’re floury and crisp up beautifully while staying soft inside.
Can I make these air fryer roast potatoes ahead of time?
Yes. You can parboil and season the potatoes in advance, then air fry them fresh when ready to serve. Or reheat leftovers in the air fryer for a few minutes to bring back the crisp.
Are air fryer roast potatoes healthier?

Method
Step 1
Parboil your potatoes for 8 minutes, then drain and give them a bit of a shake in the pot to fluff up the outsides a bit.
Step 2
Add them to the air fryer but remove the grid at the bottom if you have one – you want them to sit in the small serving of oil. Spray the potatoes with low-calorie oil or add 2 tablespoons of oil.
Step 3
Air-fry at 200°C (390°F) for 22 minutes, but shake them after 10 minutes and again at 15 minutes. Have a snoop and spray in some more low-calorie oil, if required.
Step 4
For the last few minutes, add in the rosemary and a sprinkle of salt and pepper.
Step 5
Note: You can save 230 total calories across the whole serving if you replace 2 tablespoons of oil with low-calorie oil spray.
