If you’ve been anywhere near social media lately, you’ve probably seen the air fryer craze taking over, and I’ve been lucky enough to be part of that movement. My journey started back in 2020, during lockdown. Like so many of us, I found myself with extra time on my hands and a desire to cook healthier, homemade meals. What began as a simple Instagram account, where I shared my cooking experiments, eventually turned into something bigger—much bigger—than I ever anticipated.
Picture this: it’s lockdown, we’re all stuck at home, and I found myself feeling a bit bored. I’ve always loved to cook and enjoyed using tools like the air fryer and slow cooker, but I hadn’t seen many people fully utilise their potential. That’s when I decided to experiment with my slow cooker and air fryer, sharing my recipes online. Little did I know that my simple recipes would resonate with so many of you!
I wanted to make cooking fun and accessible. I didn’t want to spend hours in the kitchen, and I certainly didn’t want to compromise on flavour. That’s where the air fryer came in. It was a game-changer. Not only did it allow me to create healthier meals with less oil, but it also cut down on cooking time, making it perfect for busy people who still want something delicious and homemade.
Soon enough, my air fryer recipes started getting attention. I posted dishes like my Sweet Chilli Chicken Wrap Melt, Pepperoni & Pesto Stuffed Chicken Breast, and Cream Egg Croissant Balls. These recipes caught fire online and people started tagging me, sharing their own versions, and asking for more. It was surreal to see my simple, everyday meals being enjoyed by so many. Coat 2/3 chicken breasts in: * 1 tbsp oil * 1 tsp paprika * 1 tsp garlic granules * Salt and pepper For the garlic Parmesan sauce, mix together: * 100g melted butter * 2/3 chicken breasts * 75g Parmesan * Handful of chopped parsley * 4 cloves of garlic, minced * Salt and pepper * Chilli flakes (optional) Method: 1. Cut your chicken into long chunks and marinate in some oil, garlic granules, paprika, salt and pepper 2. Pop your chicken onto skewers and place in the air fryer for 20 minutes at 190 3. Prepare your garlic Parmesan mixture by melting your butter and mix with Parmesan; parsley, garlic, salt and pepper 4. After the chicken is cooked, baste in the sauce and cook for another 5 minutes 5. Let the chicken cool and enjoy! I’ve had the pleasure of sharing some of my favourite recipes on MOB, a platform that celebrates creativity in the kitchen. This crispy sesame chicken is one of my favourites for a weeknight treat or when I’m craving something Asian-inspired. The chicken is lightly battered, air-fried to a perfect crisp, and then tossed in a sweet, savoury sesame sauce that’s totally addictive. It’s so much lighter than deep-frying, but you still get that perfect crunch. Serve it up with rice, and you’ve got an irresistible dish.
Air Fryer Caprese Chicken
Caprese chicken is one of those dishes that’s simple yet packed with flavour. The air fryer does the hard work, cooking the chicken breasts until they’re perfectly juicy, then I top them with mozzarella, tomatoes, and basil. A quick drizzle of balsamic glaze, and you’ve got a fresh, flavourful meal that’s ready in no time – ideal for when I want something light and satisfying.
Air Fryer Prawn & Sesame Toast
Prawn and sesame toast is such a brilliant snack or appetiser, and the air fryer makes it so much easier. The prawns are seasoned and spread onto slices of bread, then covered in sesame seeds and air-fried until golden and crispy. It’s such a simple recipe, but it has all the flavours and textures you want – crispy, savoury, and perfectly crunchy.
Air Fryer Duck Pancakes
Duck pancakes are a classic, and using the air fryer makes them so much easier. I slow-cook the duck to get it tender, then pop it in the air fryer for that perfect crispy skin. The result is a rich, flavourful duck filling, which pairs perfectly with the light, warm pancakes and a bit of hoisin sauce. It’s a delicious dish that feels a little fancy but is simple to make.
Air Fryer Crispy Honey Chilli Halloumi
This crispy honey chilli halloumi is a real showstopper! The halloumi is coated in a crispy batter and air-fried to golden perfection, then drizzled with a sweet and spicy honey-chili sauce that’s just the right balance of heat and sweetness. It’s a perfect starter or side dish, and I can’t get enough of it – the texture is incredible, and the flavour is out of this world.
In addition to social media and TV, I’ve also written five cookbooks. The first, Bored of Lunch: The Healthy Air Fryer Book, was an instant hit and featured 80 of my best air fryer recipes. I followed that up with books focusing on slow cooking and even created a 30-minute meals air fryer book that was released in April 2024.
The air fryer isn’t just a trend, it’s a revolution. It’s healthier, quicker, and more energy-efficient. With just a little creativity, you can whip up everything from savory meals to decadent desserts. And the best part? You don’t have to be an expert to get great results.
