I make these all the time when I am in the mood for a sweet treat. I always have rice cakes in the cupboard and this is probably my favourite way to eat them.

Rice cakes don’t have to be dry and boring when you have this super simple recipe. You can use whatever spread you want, such as peanut butter or Biscoff. Top with banana or strawberries and pour some melted chocolate on top. A delicious snack and not too bad on calories either.

If you aren’t a huge fan of peanut butter, why don’t you try adding your favourite spread? Biscoff is my personal fave, but you can also try almond butter, cashew butter or Nutella. You can customise these rice cakes however you like, you can even swap out the banana for your favourite fruit like strawberries for example.
Storage and Meal Prep Tips
If you are preparing these rice cakes as part of your meal prep, simply store the rice cakes in the fridge for 2-3 days in an airtight container to keep them nice and fresh. Personally I like to make them in the evening and eat them fresh as they don’t take that long to make.
Method
Step 1
Top the rice cake with peanut butter and some banana slices.
Step 2
Melt your dark chocolate with some coconut oil until nice and smooth.
Step 3
Spread the melted chocolate over the topped rice cake and sprinkle some flaky salt on top.
Step 4
Place in the freezer for about 10-15 minutes and enjoy. Trust me, you’ll eat more than one🤣
