In this case it’s twice-cooked pork, initially gently boiled then fried in oil, veg and plenty of chilli and garlic. Traditionally this would be fried in a wok, it’s so convenient on a busy day to be able to throw it in the air fryer and get a couple more things done while it cooks.

Step 1
Add the pork belly to a pot of boiling water with the grated ginger, and simmer over a low heat for about an hour. This makes it incredibly moist. Allow to cool slightly and then slice lengthways and again into bitesize chunks.
Step 2
Add the pork to the air fryer drawer along with all the other ingredients, apart from the fresh chilli and garlic, and cook at 200ºC (390ºF) for 8–10 minutes. 1 tbsp grated fresh ginger
50g (2 oz) asparagus, cut into chunks
1 leek, cut into 1cm slices
