Can I meal prep spicy chorizo, bean and egg pots?

Yes, absolutely. These spicy chorizo, bean and egg pots are made for meal prep. I like making a batch at the start of the week, portioning them into individual containers and keeping them chilled until I need them. The beans and chorizo hold up really well, while the eggs make the pots filling enough for breakfast, lunch or a quick dinner. If you’re planning to meal prep them, I’d recommend cooking the eggs until they’re properly set rather than leaving the yolks runny.

 

 

How long do chorizo, bean and egg pots last in the fridge?

For meal prep, I’d keep them refrigerated and eat them within 2 days. Once cooked, cool the pots quickly, cover them and get them into the fridge within around 1–2 hours. For the best texture, I also prefer making smaller portions rather than putting one huge batch into the fridge to cool. The Food Standards Agency recommends cooling cooked food quickly and keeping it chilled.

 

 

Can I make these egg pots ahead of time?

Yes. That’s one of the reasons I love this recipe. You can prepare the chorizo and bean mixture ahead, portion it into your pots and add the eggs before cooking. If you’re making the complete pots in advance, allow them to cool quickly before refrigerating. When you’re ready to eat one, reheat it thoroughly until piping hot.

 

 

Can you freeze spicy chorizo, bean and egg pots?

I’d recommend freezing the chorizo and bean mixture rather than the finished egg pots. The beans and chorizo freeze well, but eggs can change texture after freezing and reheating. For an easier meal-prep option, freeze portions of the spicy bean mixture, defrost thoroughly in the fridge and then add a fresh egg when you’re ready to cook.

 

 

How do I reheat chorizo, bean and egg pots?

If you’ve already cooked the pots, reheat them until they’re piping hot all the way through. You can use a microwave for convenience or reheat them in the oven, depending on how you originally cooked them. I wouldn’t repeatedly cool and reheat the same portion. Reheat only the amount you’re planning to eat.

 

 

Can I eat these spicy chorizo and bean pots for breakfast?

Definitely. I actually think they’re a great alternative to the usual breakfast meal prep. You’ve got smoky, spicy chorizo, creamy beans and eggs all in one pot, so they’re much more substantial than a quick bowl of cereal or toast. They’re also brilliant for those mornings when you want something savoury and filling without having to cook from scratch.

Can I make these chorizo and bean pots without eggs?

Yes. If you don’t fancy eggs, simply leave them out and treat the recipe as a spicy chorizo and bean pot. You could add extra vegetables, grated cheese or serve it with toast instead. That also makes the base easier to freeze for future meals.

 

 

What should I serve with spicy chorizo, bean and egg pots?

For me, crusty bread or good sourdough is the obvious choice. It’s perfect for mopping up the spicy tomato and bean mixture. You could also serve the pots with avocado, a handful of rocket, grilled vegetables or a simple side salad. If you’re making them for breakfast, a slice of toasted bread is usually all you need.

Yes, and that’s probably my favourite thing about them. You can cook the bean and chorizo mixture in a larger batch, divide it between portions and then cook the eggs as needed. It saves time during the week without making you feel like you’re eating the exact same meal every day.

 

 

What’s the best way to store meal-prep egg pots?

Once cooked, let the pots cool quickly, then cover them and refrigerate them. Keep your fridge at 0–5°C and eat refrigerated leftovers within two days. If you’re specifically meal prepping for several days, I’d make the chorizo and bean base in advance and keep some portions frozen rather than keeping cooked egg pots in the fridge for longer than recommended.

 

 

Can I use runny eggs for meal prep?

I’d avoid runny eggs when you’re making these specifically for meal prep. A runny yolk is lovely when you’re eating the dish straight away, but for a make-ahead meal it’s better to cook the egg thoroughly and chill it promptly. If you’re using lightly cooked eggs, follow current UK egg-safety guidance and use eggs carrying the British Lion mark or produced under the Laid in Britain scheme where appropriate.

 

 

Can I make these chorizo bean pots vegetarian?

You can make a vegetarian version, although you’ll obviously lose the smoky flavour that chorizo brings. Try replacing the chorizo with smoked paprika, extra chilli, garlic and a little olive oil to build some of that depth back into the dish. You could also add extra beans, peppers or mushrooms to make the pots more substantial.

 

 

Why are these spicy chorizo, bean and egg pots good for meal prep?

Because they’re easy, filling, inexpensive and packed with flavour. The ingredients are simple, the mixture can be made in bulk and the portions are easy to customise. It’s exactly the sort of recipe I want from meal prep – something that saves me time during the week but still feels like proper food when I sit down to eat it.

Method

Step 1

Bring a saucepan of water to the boil and carefully add the eggs. Cook for 8 minutes, then transfer straight into a bowl of iced water for 3 minutes (this gives you that perfect jammy yolk).

Step 2

While the eggs are cooking, fry the chorizo in a large pan for a few minutes until golden and it has released some of its oils. Remove from the pan and set aside.

Step 3

Add the chopped pepper and onion to the same pan and cook until softened. Stir in the tomato purée, oregano, paprika and chilli flakes, then add the baked beans and chicken stock. Give everything a good mix.

Step 4

Return the crispy chorizo to the pan and stir everything together. Let it bubble away for a few minutes until hot.

Step 5

Divide the spicy beans between 4 containers and top each with 2 jammy eggs.

Step 6

To reheat, microwave for around 2 minutes, or until piping hot. Alternatively, serve fresh with a slice of toasted sourdough for the ultimate brunch.  Enjoy 🙂
