Spiced Yogurt Chicken Breasts

This is a speedy meal prep one, so if you find yourself disorganised on a Monday you can quickly throw this together and keep the other servings for throughout the week. Perfect with a salad or a nice lunchtime wrap. You can also just batch prep these and keep them in the fridge ready for sandwich fillers.

Can I use this spiced yogurt chicken for meal prep?

 

Yes – this recipe is ideal for meal prep. Cooked chicken can be stored in an airtight container in the fridge for 2–3 days. Pair with salads, rice, or roasted vegetables for ready-to-go meals.

 

 

How long should I marinate the chicken?

 

For the best flavour and tenderness, marinate the chicken for at least 1–2 hours. For even juicier results, you can marinate overnight.

 

 

Can I cook this chicken without yogurt?

 

Yogurt is key to keeping the chicken tender and moist. If you don’t have yogurt, you could try a marinade with olive oil and lemon juice, but it won’t have quite the same richness or tenderness.

 

 

Can I make this spiced yogurt chicken in the oven or air fryer?

 

Yes – bake in the oven at 200°C for 20–25 minutes, or cook in an air fryer at 180°C for 15–20 minutes, until the chicken is cooked through.

 

 

Can I use different spices?

 

Absolutely – feel free to adjust the spice mix to suit your taste. Paprika, cumin, coriander, and turmeric all work well in this spiced yogurt chicken recipe.

 

 

Is this recipe healthy?

 

Yes – it’s high in protein, low in added fat (aside from the yogurt), and can easily be paired with vegetables or whole grains for a balanced meal.

Method

Step 1

Score the chicken 3 times along the breast like a hassleback.

Step 2

Mix together all the remaining ingredients with a little salt and pepper in a bowl, then add the chicken and turn to coat. If you have time, let it marinate in the fridge for an hour but you don’t need to if you’re in a rush.  

Step 3

Transfer to the air fryer and cook the chicken for 14–16 minutes at 200°C. Once cooked, serve with a simple salad.

4 chicken breasts, whole  

1 tsp olive oil  

4 tbsp low-fat natural yogurt   

1 heaped tbsp curry paste   

1 tsp paprika   

juice of 1 lemon

salt and pepper, to taste
