I’ve been seeing this everywhere lately, so I had to give it a go… and wow.. This is ridiculously good. I’ll be making this on repeat all Summer.

Method
Step 1
Smash your cucumbers and chop into bite-sized pieces. Leave them to drain in a sieve (they hold a lot of water).
Step 2
Mix together the garlic, salt, rice vinegar, soy sauce, brown sugar, honey, sesame oil and chilli oil to make your dressing.
Step 3
Add the drained cucumbers to the dressing, toss well, and finish with toasted sesame seeds.
Step 4
Serve straight away, or pop in the fridge. It’ll keep for up to 2–3 days. Enjoy 🙂
