Method

Step 1

Chop all your vegetables and toss them into the slow cooker with vegetable broth, butter, thyme, salt, and pepper. Cook on high for 3 hours or low for 5 hours.

Step 2

Once cooked, add in some milk for creaminess, then blend everything together with an immersion blender. Top with some fresh chives.

Step 3

2-3 tbsp butter
