Method

Step 1

Chop all your vegetables and toss them into the slow cooker with vegetable broth, butter, thyme, salt, and pepper. Cook on high for 3 hours or low for 5 hours.

 

Step 2

Once cooked, add in some milk for creaminess, then blend everything together with an immersion blender. Once blended, top the vegetable soup with some fresh chives.

Step 3

Pair the slow cooker soup with a delicious cheese toastie. All you need to do is butter some bread, add your favourite cheese, and butter the top to make it nice and crispy. Pop in the air fryer for 8 minutes at 200°C.

Step 4

Once the cheese toastie is done, serve the hot soup and enjoy!

2-3 white potatoes, peeled and quartered 

2 leeks, sliced 

3 celery sticks, chopped 

2 carrots, chopped 

1 onion, finely diced 

2-3 tbsp SMUG butter  

1 tbsp garlic puree 

3 sprigs fresh thyme 

1.6L vegetable broth 

200ml SMUG milk  

Salt and pepper 

Fresh chives, to garnish
