Method
Step 1
Chop the vegetables into small chunks then add everything to the slow cooker / crockpot, if I’ve time I’ll add the chicken in for the last hour or two but if you don’t it’s fine to add from the start it just falls apart and becomes stringy
Step 2
Cook the vegetable soup on high for 3 hours or low for 5. When done, serve with crusty bread and enjoy!

300g cooked chicken
700g of mixed veg (you can buy this in a packet but it’s celery, carrots & leeks)
Fresh parsley
Salt & pepper
1/2 a cup of barley/lentils (you can buy this as a soup mix too)
1.4L of chicken stock (tbh I just fill the slow cooker to the top)
