Introducing the ultimate comfort food – Slow Cooker Spanish Chicken Casserole. This dish is a winter essential, super comforting with a mild kick and perfect for dipping some buttery crusty olive ciabatta. Heaven!!

Can you make chicken casserole in a slow cooker?

Yes, slow cookers are ideal for casseroles. This slow cooker chicken casserole recipe is perfect for hands-off cooking—just add your ingredients and let the slow cooker work its magic for a rich, flavourful dish.

What makes this a Spanish chicken casserole?

Spanish chicken casserole typically includes ingredients like smoked paprika, garlic, bell peppers, tomatoes, and olives for bold Mediterranean flavour. It’s hearty, warming, and packed with rustic Spanish-inspired goodness.

Do I need to brown the chicken first?

You don’t have to, but browning the chicken adds extra flavour. That said, at Bored of Lunch we love a “throw and go” approach—so if you’re short on time, just add everything straight to the slow cooker.

How long does chicken casserole take in a slow cooker?

Cook on low for 6–7 hours or on high for 3–4 hours. The chicken should be tender and fall-apart delicious by the time it’s done.

What cut of chicken is best for slow cooker casseroles?

Skinless, boneless chicken thighs work best—they stay juicy and hold up well during slow cooking. You can also use chicken breast, but keep an eye on it so it doesn’t dry out.

Is this chicken casserole spicy?

This Spanish chicken casserole has a mild kick, thanks to paprika and chilli flakes, but it’s not overly spicy. You can always adjust the heat to suit your taste.

Can I make this recipe ahead of time?

Yes! You can prep the ingredients the night before and store them in the fridge, ready to dump into the slow cooker the next morning. Leftovers also keep well for up to 3 days in the fridge.

Can I freeze Spanish chicken casserole?

Absolutely. This dish is freezer-friendly. Once cooled, portion it out and freeze for up to 3 months. Defrost thoroughly and reheat until piping hot.

What should I serve with this slow cooker chicken casserole?

Crusty bread like olive ciabatta, creamy mashed potatoes, or rice are perfect for soaking up the rich sauce. A side of green veg also goes nicely.

Is this a healthy slow cooker recipe?

Yes, it’s packed with lean protein and nutrient-rich veg, and made with whole ingredients. It’s a great lighter alternative to cream-based casseroles but still feels comforting and satisfying.
