If you’ve seen dirty cabbage all over social media and wondered what it actually tastes like, this is the recipe to try. It’s simple, inexpensive, packed with flavour and one of those meals I come back to when I want something comforting without loading up on carbs.

 

What is dirty cabbage?

Dirty cabbage is a simple, hearty dish made with cabbage, mince, peppers, onion and plenty of seasoning. The cabbage cooks down with the mince and beef stock, soaking up all those savoury flavours. It became popular as a social media food trend, but I’ve ended up genuinely loving it as an easy weeknight dinner. It’s budget-friendly, filling and doesn’t need loads of ingredients.

 

 

Can you make dirty cabbage in a slow cooker?

Yes, and that’s exactly how I like to make it. The slow cooker gives the cabbage plenty of time to soften and allows all the flavours from the mince, beef stock, Worcestershire sauce, garlic and spices to come together. It’s also a great recipe for those days when you want to throw everything together and let the slow cooker do the work.

 

 

Is slow cooker dirty cabbage low carb?

Yes. Cabbage is naturally relatively low in carbohydrates, and this recipe doesn’t use rice, pasta or potatoes. That makes it a great option if you’re looking for a low-carb dinner that’s still substantial and satisfying.

 

 

Is dirty cabbage healthy?

It can be a really balanced option, particularly when made with lean mince and plenty of vegetables. This recipe contains cabbage, peppers and onion alongside the mince, and it’s high in protein. Each serving is approximately 289 calories and 34g of protein, based on the ingredients used. Nutritional values can vary depending on the type and brand of mince and other ingredients you use.

 

 

What kind of mince should I use?

You can use the mince you prefer. Beef mince works particularly well with the beef stock, Worcestershire sauce and spices, giving the dish a rich, savoury flavour. If you’re looking to reduce the fat content, use a leaner beef mince.

 

 

Can I use turkey mince instead of beef?

Yes. Turkey mince is a good alternative if you prefer it. The flavour will be slightly lighter, so you may want to adjust the seasoning to taste. The garlic, Worcestershire sauce, paprika and curry powder still work really well with turkey.

 

 

Do I need to brown the mince before putting it in the slow cooker?

You don’t have to, which is one of the reasons I love this recipe. If you have a few extra minutes, browning the mince in a frying pan first can add extra flavour and colour. But if you want this to be as easy as possible, you can add the mince directly to the slow cooker.

 

 

Do I need to cook the cabbage before adding it to the slow cooker?

No. There’s no need to pre-cook the cabbage. Simply slice the cabbage and add it to the slow cooker with the other ingredients. It will soften as it cooks and absorb all the flavours from the mince and stock.

 

 

Why is it called dirty cabbage?

The name comes from the appearance of the finished dish. As the cabbage cooks with the browned or seasoned mince, stock and spices, it takes on a darker, richer appearance. It might not win any beauty contests, but this is definitely one of those dishes where the flavour is much better than the name or appearance suggests!

 

 

What type of cabbage is best for dirty cabbage?

I use white cabbage, as it holds up well during slow cooking and becomes lovely and tender without completely disappearing. You can experiment with other varieties, but white cabbage is my go-to for this recipe.

 

 

Can I use pre-shredded cabbage?

Yes. Pre-shredded or bagged cabbage can save you some preparation time. Just make sure it’s fresh and adjust the amount depending on how much cabbage comes in the bag.

 

 

Can I add other vegetables?

Definitely. This is a very forgiving recipe. You could add mushrooms, courgette, carrots or other peppers depending on what you have in the fridge. Just remember that adding extra vegetables may change the amount of liquid and cooking time slightly.

 

 

Can I make dirty cabbage ahead of time?

Yes, and it’s one of those meals that works really well for meal prep. Cook the recipe, allow it to cool properly and store it in the fridge in an airtight container. Reheat thoroughly when you’re ready to eat.

 

 

How long does dirty cabbage last in the fridge?

Once cooked and cooled, keep it refrigerated in an airtight container and use it within 3–4 days. When reheating, make sure the food is piping hot throughout before serving.

 

 

Can you freeze dirty cabbage?

Yes. Allow the cooked dirty cabbage to cool completely, then portion it into suitable airtight containers or freezer bags and freeze. Defrost thoroughly in the fridge before reheating and make sure it is piping hot throughout before eating. The cabbage may have a slightly softer texture after freezing, but the flavour holds up well.

 

 

Is slow cooker dirty cabbage cheap to make?

Yes, this is one of the things I love about it. Cabbage is an inexpensive vegetable, and you only need a handful of simple ingredients to make a really filling meal. It’s a great budget-friendly slow cooker recipe when you want something hearty without spending loads on ingredients.

 

 

Can I make this recipe without a slow cooker?

Yes. You can make dirty cabbage in a large pot or casserole dish on the hob, or in the oven. The cooking method will be different, so you’ll need to adjust the cooking time and keep an eye on the liquid and cabbage as it cooks.

Step 1

For extra flavour, brown the mince in a frying pan first. If you don’t have time, feel free to skip this step. 

Step 2

Add the rest of the ingredients to the slow cooker and give everything a stir. Cook on high for 3-4 hours or low for 5-6 hours then serve. I like to finish mine with some crispy chilli oil for a nice kick.

1 tbsp tomato puree

2 tbsp Worcestershire 

4 garlic cloves, minced 

1 tsp onion powder
