Slow Cooker Creamy Garlic Pepper Beef is a delicious and nutritious dish that’s perfect for those seeking a healthy, low-calorie meal option. This recipe combines tender beef strips with a rich, creamy garlic sauce, making it an ideal choice for meal prep or a tasty midweek dinner. With only 541 calories per serving (including rice), it’s a protein-packed meal that doesn’t compromise on flavour.

To make this dish even healthier, consider using lean beef cuts and light cream cheese. The slow cooking process ensures the meat remains tender while keeping the calorie count low. By incorporating vegetables like spinach, you can boost the nutritional value without adding significant calories.

How can I meal prep with Slow Cooker Creamy Garlic Pepper Beef?

Slow Cooker Creamy Garlic Pepper Beef is excellent for meal prep:

  • Cook a large batch at the beginning of the week
  • Portion into airtight containers
  • Store in the refrigerator for up to 3 days
  • For longer storage, freeze portions for up to 3 months
  • Reheat gently in a microwave or on the stovetop, adding a splash of broth if needed

Can I make Slow Cooker Creamy Garlic Pepper Beef dairy-free?

While the original recipe uses cream cheese and Parmesan, you can create a dairy-free version by substituting cream cheese with dairy-free alternatives like cashew cream or coconut cream. You can replace the Parmesan with nutritional yeast for a cheesy flavour and use a dairy-free butter or olive oil instead of regular butter.

What sides pair well with Slow Cooker Creamy Garlic Pepper Beef?

  • White or brown rice
  • Pasta
  • Mashed or roasted potatoes
  • Steamed vegetables like broccoli or green beans
  • Crusty bread or garlic bread
  • Fresh, crisp side salad
