Step 1
Chop your vegetables into small cubes and pop into the slowcooker with all the ingredients above apart from the cream, chives and bacon
Step 2
Cook on low for 8 hours or high for 4 hours. Then slightly mash some of the potatoes in the pot so it thickens the soup (add cornflour if you want it thicker)
Step 3
Stir in some double cream and top with some chives and bacon. Serve and enjoy!
