Method
Step 1
Seal the beef on the pan for 2 -3 minutes.
Step 2
Add to the Slowcooker with all other ingredients (except mayo) & cook on high for 6-8 hours or low for 10-12.
Step 3
Shred the beef with two forks keeping the juices.
Step 4

Ingredients
Coat 800g (6 cups) beef brisket in oil spray and 1 tbsp cajun seasoning
4 tsp of chipotle paste
1 tsp or paprika
1 tsp curry powder
1 tbsp garlic purée or garlic chopped
1 tbsp curry leaves
Salt and pepper
Juice of 1-2 limes
400ml (13.5 fl oz) of beef or chicken stock
Zesty Chipotle Mayo made from:
Juice of 2 limes
4 tbsp light mayo
2 tbsp sriracha mayo
1 tsp chipotle paste
1 tsp smoked paprika
