Ingredients Coat 800g beef brisket in – oil spray – 1 tbsp Cajun seasoning (Fry on a pan for 3 minutes) Then add to the Slowcooker with all ingredients below – 4 tsp of chipotle paste – 1 tsp or paprika – 1 tsp curry powder – 1 tbsp garlic purée or garlic chopped – 1 tbsp curry leaves – Salt and pepper – Juice of 1-2 limes – 400ml of beef or chicken stock Zesty Chipotle Mayo – Juice of 2 lines – 4 tbsp light mayo – 2 tbsp sriracha mayo – 1 tsp chipotle paste – 1 tsp smoked paprika 1. Seal the beef on the pan for 2 mins 2. Add to the Slowcooker with all other ingredients (except mayo) & cook on high for 6-8 hours or low for 10-12 3. Shred the beef with two forks keeping the juices 4. Serve with soft tacos, tomatoes, lettuce, coriander and your mayo. Method
Step 1
Seal the beef on the pan for 2 -3 minutes.
Step 2
Add to the Slowcooker with all other ingredients (except mayo) & cook on high for 6-8 hours or low for 10-12.
Step 3
Shred the beef with two forks keeping the juices.
Step 4

Zesty Chipotle Mayo made from:
Juice of 2 limes
4 tbsp light mayo
2 tbsp sriracha mayo
1 tsp chipotle paste
1 tsp smoked paprika
