Slow Cooker & Air Fried Birria Tacos
My first ever hybrid recipe using a Slow cooker & Air Fryer together. Birria tacos though - magnificent & so easy to make.

Believe in the TikTok hype – there’s a reason why birria tacos are so popular. In the traditional recipe you’d use ancho or guajillo chilli but a regular red chilli with some chipotle paste is grand (and something you’d already have in the cupboard). If you don’t have an air fryer you can pan fry the tacos or pop them in the oven.
What is Birria?
Birria is a traditional Mexican dish originating from the state of Jalisco. It’s a flavourful, spicy stew typically made with goat meat, but beef is commonly used as well. The meat is slow-cooked in a rich broth infused with dried chillies, herbs, and spices until it’s tender and falling apart.
What are Birria Tacos?
Birria tacos, also known as quesabirria, are a popular street food that has taken the culinary world by storm. These tacos feature the tender, slow-cooked birria meat stuffed into corn tortillas that have been dipped in the flavourful cooking broth and then fried until crispy. They’re often served with melted cheese, diced onions, fresh coriander, and a side of consommé (the strained cooking liquid) for dipping.

Method
Step 1
Brown the beef and add everything to a Slowcooker (with the exception of the tortillas).
Step 2
Cook on high for 7 hours then remove and shred the beef.
Step 3
Blitz the sauce in the slow cooker and dip the wraps.
Step 4
Fill the wraps with the shredded beef, coriander and some onion if you can.
Step 5
Add them to the air fryer and using a brush recoat them in the sauce from the slow cooker.
Step 6
Air fry at 200°C (390°F) for 5 minutes.
Step 7
Serve with guacamole and sour cream – deeeeelicious.

900g (32 oz) beef brisket
700ml (24 fl oz) beef stock
1 x onion
1 x tsp cumin
1 tsp paprika
5 x garlic cloves
3 x bay leaves
Salt & Pepper
Peppercorns
Tbsp oregano
Tsp chipotle paste
1 x red chilli
1 x cinnamon stick
2 x cloves
1 x tin of chopped tomatoes
8-10 x mini tortilla wraps
Coriander, Guac & Sour Cream to serve
