Air Fryer Roasted Whole Cauliflower with Tahini and Garlic

This whole roasted cauliflower is a brilliant dish to serve if you’ve got people round and some of your guests don’t eat meat. Gorgeous with a salad and some smashed potatoes on the side.

I try to make sure I have one completely veggie day a week. Vegetables are much cheaper than buying meat, so it saves me money as well as being good for me and the planet, but it’s also helped me be more adventurous in the veggie recipes I’ve come up with. This whole roasted cauliflower is a brilliant dish to serve if you’ve got people round and some of your guests don’t eat meat. Gorgeous with a salad and some smashed potatoes on the side. Method

Step 1

Cook the whole cauliflower in a pan of boiling water over a low heat for 10 minutes until starting to soften. Drain and allow to steam dry.

Step 2

Mix the oil with the lemon juice and spices and brush all over the cauliflower, then season with salt and pepper. Air-fry for 20-25 minutes at 180ºC (350ºF).

Step 3

Combine all the ingredients for the tahini and garlic sauce in a small bowl.

Step 4

Ingredients

1 whole cauliflower, leaves removed

1 tbsp oil

juice of 1 lemon

1 tbsp turmeric

1 tsp ground cumin

1 tsp curry powder

salt and pepper, to taste

Tahini and garlic sauce ingredients:

6 tbsp greek yoghurt

4 tbsp tahini

1 heaped tbsp garlic puree

juice of 1 lemon

zest of 1 lime

To garnish:

coriander, chopped

red chilli, sliced

50g pine nuts, toasted

4 tbsp chilli oil
