Here’s a delicious vegetarian slow cooker recipe for you all. The addition of coconut milk makes it deliciously creamy, but you could replace this with a tin of chopped tomatoes for a lower-calorie version, if you prefer.
Can I make dhal in a slow cooker?
Absolutely. Using a slow cooker to make dhal is not only hands-off and convenient, but it also allows the spices to develop beautifully over time. It’s one of the easiest vegetarian recipes you can make with minimal prep.
Do I need to soak the red lentils before cooking?
No, red lentils cook quickly and don’t require soaking. Just give them a quick rinse to remove any excess starch or debris before adding to the slow cooker.
How long does dhal take to cook in the slow cooker?
Cook on low for 6–7 hours or on high for 3–4 hours. The lentils should break down and become creamy without any need for stirring – perfect for busy days.

Method
Step 1
Place all the ingredients in the slow cooker, stir and season to taste. Cook on low for 5–6 hours, then stir and garnish with fresh coriander and chopped spring onions. Keep an eye and add more water as required to loosen.
Step 2
Dhal goes really well with vegetables and rice, but it has plenty of sauce for dipping naan as well. You could even top the bowls with some grilled chicken.

380g (1.5 cup) dried red lentils
250ml (1 cup) cold water + more as required
400ml (14 oz) tin of reduced-fat coconut milk
Handful of cherry tomatoes, finely chopped
4 garlic cloves, crushed
1 onion, sliced
2.5cm fresh ginger, grated
Juice of 1 lemon
1 tsp ground turmeric
1 tsp chilli flakes
1 tsp ground cumin
1 tsp curry powder
1 tsp garam masala
1 bay leaf
Salt and pepper, to taste
Fresh coriander and chopped spring onions, to garnish
