Loaded Christmas Cubed Potatoes

I absolutely love a Christmas chip, and craved one last week so decided to make one last week using my air fryer.

What are loaded Christmas cubed potatoes?

Loaded Christmas cubed potatoes are crispy roasted potato cubes topped with festive ingredients like turkey, ham, stuffing and gravy.

 

 

Can I make these potatoes ahead of time?

You can prep the cubed potatoes a day ahead and store them in the fridge. Roast them fresh on the day to keep them crispy. You can also pre-cook the toppings and add them just before serving.

 

 

Can I make cubed potatoes in an air fryer?

Toss the cubed potatoes in oil and seasonings, then air fry at 200°C (390°F) for about 20–25 minutes, shaking halfway through. Add toppings after they’re cooked.

 

 

What type of potatoes are best for this recipe?

Russet or Maris Piper potatoes work best because they get crispy on the outside while staying soft inside. You can also use baby potatoes for smaller bites.

Method

Step 1

Dice your baby potatoes and season with olive oil, sage, rosemary, salt and pepper. Airfry for 200°C for 18-20 mins, depending on how big the cubes are. 

Step 2

Airfry your cocktail sausages 200°C for 14 mins.

Step 3

While that’s cooking, prepare your stuffing by adding 100g butter to a pan and let that melt. Add your finely diced onion herbs and breadcrumbs and leave to cook. 

Step 4

Take your cooked turkey and ham and slice them. Start to layer your cubed potatoes by adding your cooked meats, stuffing and cocktail sausages. Pour over some gravy or cranberry sauce (if you wish).

Ingredients

For the cubed potatoes: 

1kg baby potatoes  

1 tsp dried sage  

1 tsp dried rosemary 

1 tbsp olive oil  

Salt and pepper 

For the stuffing: 

100g butter 

1 onion, finely diced 

2-3 garlic cloves, grated 

1 tsp dried sage 

1 tsp dried thyme  

Handful of fresh parsley, finely chopped  

Top your chip with: 

30 mini cocktail sausages 

Leftover cooked ham

Leftover cooked turkey

Gravy (optional)
